Pápa’s Frita Nicaraguan street food now runs the kitchen at Migration Brewing on Williams
Portland, Oregon’s Migration Brewing has struck up a new partnership with food truck Pápa’s Frita to take over the kitchen at their N. Portland location at 3947 N. Williams Ave.. Pápa’s Frita is known for their authentic Nicaraguan street food culinary experience, which will pair up well with the refreshing craft beers of Migration Brewing. The official kick-off party for their planned long-term kitchen collaboration is Thursday December 12th from from 4pm - 9pm
Pápa’s Frita draws its inspiration from the traditional Nicaraguan Fritanga, a beloved street food experience. The name "Pápa’s Frita" is a heartfelt nod to Rene Ruiz's role as a single dad, with his daughter affectionately calling him "Pápa." The menu is a creative interpretation of Fritanga, that traditionally features dishes like Gallo Pinto, ensalada, queso frito, and a choice of sweet or savory plantain with carne, pollo, or cerdo asado, all served on a banana leaf. The full pub menu showcases new twists on smash burgers, salads and weekly specials that are infused with Ruiz's personal touch; blending new flavors with Nicaraguan classics.
"We are excited to partner with Migration Brewing and share our unique take on Nicaraguan street food with the Portland community," said Rene Ruiz. "This collaboration allows us to bring the essence of Fritanga to a new audience, and we’re eager to see how our dishes complement Migration’s exceptional craft beers,” state Ruiz.
Migration Brewing, known for their diverse beer lineup and creative spaces is enthusiastic about the partnership. "Papas Frita’s menu is a fantastic addition to our Williams location," said Colin Rath, Pubs Director at Migration Brewing. "We’re excited to offer our patrons a unique dining experience that celebrates the rich culinary heritage of Nicaragua."
