Fuji to Hood Japan/Oregon Omakase Brewers Dinner
Remember Brewers dinners? Before COVID-19 there were mouth watering dinners at great restaurants with some of the best brewers collaborating with chefs on enlightening pairings of food and drink. Well on Thursday, October 16th the biennial Oregon-Japan collaboration festival Fuji to Hood is expanding palates with an uncommon Omakase Brewers Dinner at Takibi, Snow Peak’s Japanese restaurant in northwest Portland.
The event will reunite Oregon brewers Gigantic Brewing, Little Beast Brewing, Threshold Brewing, & Bauman’s Cider who traveled to Japan for the Hood to Fuji immersion this past April. Brewers will be on-hand to talk about their experiences in Japan and present special pairings and small batch fermentations.
Guests will enjoy an intimate evening in Takibi’s warm dining room with a five-course omakase crafted by Snow Peak Japan chef Kugi Yuichi highlighting Japanese cultural tradition and culinary technique.
Beers include specialty Japanese-inspired creations like Gigantic Brewing Pilsner aged on Japanese Cedar, Threshold Brewing's Tide Rider sour made with Japanese ginger and citrus, and Little Beast Brewing's collaboration with legendary female Tokyo brewmaster Tomoko Sonodo of Harvest Moon Brewing.
Takibi, located on Northwest 23rd Avenue, is the only restaurant operated by iconic Japan-based lifestyle home and outdoor store Snow Peak in the U.S. Takibi’s signature hearth cooking is a reflection of Snow Peak’s outdoor culture, and the direct link to Japan is a defining feature of the restaurant.
The dinner highlights Takibi’s philosophy while continuing Fuji to Hood’s mission of fostering cultural exchange between Oregon and Japan through food, drink, and community.
Seating is limited and tickets are available now. Dinner tickets include a donation to Fuji to Hood to support the July 2026 festival.
