Kachka Fabrika new distillery and bar throws a block party
Acclaimed and popular Soviet-style Portland restaurant Kachka recently opened Kachka Fabrika at the Bindery Annex building, right next door to the former Culmination Brewing which has just reopened as Rosenstadt Brewery. (Read my restaurant/bar review in Willamette Week.)This Sunday, September 7th, Kachka Fabrika and Roux PDX are partnering to celebrate the launch of Kachka’s new premium wheat vodka with an afternoon block party that highlights women-led food and drink talent in Portland.
Kachka Fabrika is the latest brainchild of husband and wife restaurateurs Israel and Bonnie Morales, a 2,500 square foot “factory” in Northeast Portland, encompassing a vodka distillery, dumpling workshop, and now a sleek cocktail bar to showcase their products on a menu of martinis, seasonal cocktails, and elevated zakuski highlighting the freshest local seafood.
“This is really the culmination of so many things we’ve hoped to do for a long time, all under one roof,” says co-owner Bonnie Morales. “It’s been a longtime dream to offer Portland another concept, to stretch our culinary wings, and we’re so excited to highlight the incredible seafood from this region alongside our house-distilled vodka cocktails.”

The Space
Kachka Fabrika is anchored on the ground floor by an 8-seat horseshoe-shaped white marble bar, accented by emerald green tiles and a glass wall to the right through which guests can view the copper–clad distillery. High top tables made from wooden tabletops out of the original Kachka location line the room. A floor-to-ceiling constructivist geometric mural by Portland’s High Order Collective in white, green, blue and orange with images of Kachka’s vodka bottles flanks the left side of the space, punctuated by a marble standing bar. The mural leads up a wooden staircase to the second floor loft. Upstairs is soft lounge seating, marble accent tables, and room for larger parties. The entire space contains 46 seats, with larger capacity for standing events.
The Drinks
In addition to infusing vodkas (and bottling both Horseradish and Strawberry for retail recently), earlier this month Kachka released its first fully house-distilled wheat vodka, a smooth plain premium vodka that lends itself perfectly to martinis. Kachka Fabrika’s cocktail menu is comprised of a list of six original martinis, including their signature “From Kachka with Love” (Kachka Vodka, Dolin Dry vermouth, orange bitters, lemon twist, Alphonso olive), and the salty and herbaceous “Scandinavian Martini” (dill Aquavit, Lustau Manzanilla sherry, house brine, celery bitters and Gordal olive), alongside a selection of seasonal cocktails like the Da D’na (spruce tip-infused Cimarron tequila, Dolin Genepy le Chamois, Maraska Marachino, lime, carmelized pineapple, Scrappy’s NW Alpine Bitters, cherry). Fabrika’s drink menu also features vodka flights, house infusions, non-alcoholic cocktails, and a curated selection of complimentary wines by the glass and bottle.
The Food
The menu is centered on regional seafood as well as a hand-picked selection of “konservy” (imported tinned fish) with accompaniments. It begins with small snacks like steelhead jerky, cod liver “foie” with rye toasts, and oyster shooters in vodka infusions, flowing into konservy, and a broad selection of imported and domestic caviar with accompaniments. The menu of composed raw and chilled seafood includes oysters on the half shell, scallops on the half shell with corn milk foam and buckwheat furikake, marinated mussels salad and more – and all or some of the selections are available as seafood towers. The “other zakuski” section includes salads, vegetables, and heartier dishes like “clam poutine.” Kachka’s dumplings are also featured on the menu (the only crossover with the Kachka restaurant menu), including vegan options, and Brandade Vareniki filled with salt cod and potato – offered only at Kachka Fabrika.
Hours, Location & Info
Kachka Fabrika opens at 4pm Thursday-Monday, and closes at 11pm on Thursday, Sunday and Monday, and 12am on Friday and Saturday.
