Threshold Brewing & Blending hosts Cheesemaking Class
Portland's very new Threshold Brewing & Blending is holding a cheesemaking course, where you will also get a chance to do some beer pairing. The class is lead by Shannon Todd-Roth, an experienced cheesemaking instructor, and Sara Szymanski the co-owner of Threshold Brewing. Learn how to make your own aged cheese like Brie, on Saturday July 13th at Threshold.
Shannon and Sara will guide class attendees through the science of cheesemaking while giving a hands-on experience making a real batch. It starts with learning to inoculate milk with bacteria, add rennet to coagulate the curd, and finally separate the curd from the whey to form a young brie. This 3-hour course will leave you prepared to take what you’ve learned and start making cheese on your own. Register here.
Class registration includes the following:
- 3 hours of instruction and hands-on cheesemaking experience from start to finish.
- Printed brie cheese recipe and detailed step-by-step instructions to take home with you.
- Invite to an August Cheese Pick-Up Party - we’ll try the ripened cheese that we made during class!
- Cheese and beer pairing via Portland’s Cheese Bar (14 oz pour of beer pairing by Threshold Brewing & Blending with ample charcuterie and cheese to snack on during class).
- Available for purchase: cheesemaking kits at-cost.

In addition to milk, there are a few ingredients and supplies needed to produce your own cheese. We want nothing more than for you to be inspired to make your own cheese at home and to walk away from this class having all of the materials needed to do so. We’ll get what you need and make it available to you at-cost. Most likely ~$25 for the following:
- Cheese aging box
- Cheese cultures
- Bamboo cheese aging mat
- Rennet
- Cheese forms
- Cheese wrapping paper for aging
