Takibi debuts new Seven-Course Seasonal Omakase, new Sushi & Vegan Ramen options
Takibi, the Japanese restaurant at Snow Peak’s Portland flagship, is introducing a new seven-course omakase that highlights the connection between Japanese tradition and Pacific Northwest ingredients. Developed in collaboration with chefs from Snow Peak Japan, the late summer omakase is now available at dinner Wednesday through Sunday.
The menu opens with zensai (small plates), sashimi, and chawanmushi (savory steamed egg custard). Guests will then be served grilled black cod with Saikyo miso, oak-seared skirt steak with yakiniku sauce with the option to upgrade to ribeye, and chilled snow-aged ramen noodles with the option to upgrade to snow-aged A5 Niigata Wagyu, paired with chef’s choice nigiri. The meal finishes with housemade matcha ice cream and seasonal fruit. The omakase is priced at $95 per person, with an optional sake pairing available for $50.
Takibi has also expanded its dinner menu with new sushi rolls designed for summer. Highlights include tekka maki with tuna, shiso, cucumber, and sesame seed; negitoro maki with medium-fatty tuna, scallions, and shiso; and unagi maki with grilled eel, sweet soy, cucumber, and Japanese omelette.
At lunch, Takibi now offers a vegan spicy miso tonkotsu-style ramen, featuring Niigata miso, ichimi, negi, bamboo shoots, sesame seeds, and black pepper. This new addition gives guests a plant-based option that delivers the depth and richness of a traditional Japanese ramen.
Dinner service runs Wednesday through Sunday from 4:30pm to 8:30pm, with reservations recommended but walk-ins are always welcome! Lunch is served from 11:30pm to 3:00pm.
