Premiere Upcycling Food & Drink Event ‘Summer Supper’
Chef Lineup + Tickets for Urban Gleaners’ Upcycled Feast | Summer Supper Returns Sept. 14 at The Redd
Commensal Fermentation, Bauman’s Cider, and an assortment of artisan beverage makers from coffee roasters to canned cocktails, seltzers, and tea, have teamed-up with some of the regions top chefs at the premiere upcycling food event in Oregon. In a city known for sustainability and creativity in the kitchen, Summer Supper exemplifies Portland’s leadership in turning food equity into a shared celebration.
The second annual Summer Supper will feature a walk-around tasting event celebrating Oregon's most interesting and dynamic chefs and restaurants (including Sarah Minnick of Lovely's 50 50, Fatou Ouattara of Akadi, Tyler Malek of Salt & Straw, Hayward, Sugarpine Drive-In, Xiao Ye, and more!). The evening will feature more than 20 chefs, bakers, winemakers, and beverage makers (see complete list below), each crafting inspired small plates using gleaned and upcycled ingredients—transforming what’s often discarded into something extraordinary. Complementing the culinary creations will be a curated selection of local beer, wine, craft cocktails, and non-alcoholic beverages from some of the region’s favorite vendors.
“Summer Supper shows that delicious, beautiful food can come from what others throw away,” says Nico Niebes, Executive Director of Urban Gleaners. “Our community is full of people who care about equity and the environment and this event brings them together around a shared table.”
Since 2006, Urban Gleaners has been rescuing fresh, high-quality food and delivering it to families across Portland. Their mission tackles two urgent challenges: food waste and hunger. With 40% of food ending up in landfills and 1 in 4 children in Oregon lacking access to healthy meals, the need is clear. Urban Gleaners collects surplus food from restaurants, grocery stores, farms, schools, and corporate kitchens, and then redistributes it through free food markets and meal programs. At its core, the organization is building a more just and resilient food system, one where everyone has access to good food, and nothing goes to waste.

Last year’s inaugural Summer Supper welcomed over 550 guests, where 90% of the food was gleaned. Over 1,100 pounds of food were gleaned for the event, and 123 pounds of leftovers were donated back to Urban Gleaners for distribution at Free Food Markets. Even the scraps were put to good use—composting goats on-site helped polish off the night, with Chef Gregory Gourdet’s beets reportedly a crowd favorite.

A gleaned raspberry beer made for Summer Supper. Inspired by the ruby-throated hummingbird, one of nature’s best gleaners, Brewer Mike Mathis used upcycled raspberries to create a really exciting unique beer for our event.
